Tomato puree - 100 gm
Tomato - 50 gm (optional)
Stock - 1 ltr.
Refined flour - 80 gm
Garlic paste - 100 gm
Bacon scraps - 15 gm (optional)
Butter - 80 gm
Salt and pepper - as required
White wine - 45 ml (optional)
Oregano and basil - as required
Method
Turn on the flame, heating the saucepan by adding butter to it.
Then add the mirepoix and bacon scraps and fry until slightly brown.
After this stir it after adding refined flour.
Allow it to cool after mixing the tomato puree and chopped tomatoes, salt, oregano, and basil.
Stir after adding the stock gradually.
Again stir gradually after adding white wine and bouquet garni.
For approx 1 ½ hrs simmer it after correcting the seasoning.
Through a fine strainer or chinois pass it.
Now ready to serve with food.
How to make sauce Hollandaise?
Ingredients
Egg yolks - 2 nos
Butter - 200 gm
Salt - to taste
Parsley - 1 tsp (finely chopped)
Peppercorn - ½ tsp (crushed)
Lemon juice - 1 tsp
Cream - 60 ml (optional)
Method
Take the required butter and a clean bowl.
Turn on the flame, then hit the double boiler and melt the butter on its top.
Whisk together after adding beaten egg yolks and cream.
After this add lemon juice and salt.
Over the double boiler, cook it by stirring constantly until the mixture thickens.
Turn off the flame, then until light beats with a whisk.
Stir in parsley, paprika, and crushed pepper.
Now ready to serve with food.
How to make Mayonnaise sauce?
Ingredients
Egg yolks - 2 nos ( at room temperature)
Salt and white pepper dust - to taste
Mustard powder - ½ tsp
Wine vinegar / lemon juice - 1 tsp
Salad oil / Olive - 200 ml ( at room temperature)
Method
Take a wide shallow mixing bowl and place the egg yolks.
Stir consistently after dripping the oil drop by drop.
After this add the rest of the oil in a thin trickle after the mixture gets thick and creamy.
Until it turns pale yellow, continue stirring it.
After becoming too thick then add wine vinegar, mustard powder, salt, white pepper, and stir again for some minutes.
Now ready to serve with food.
How to make a sauce for Pizza?
Ingredients
Tomatoes - 5 (medium size)
Garlic pods - 5
Sugar - 1 tsp
Salt - 1 tsp
Red chili flakes - 1 tsp
Mixed herbs - 1 tsp
Olive oil - 2 tbsp
Tomato paste - ½ cup canned tomato (optional)
Basil - ½ tsp
Oregano - ½ tsp
Paprika powder ½ tsp
Method
First, cut the tomatoes into rough sizes.
Then blend in a blender by adding garlic pods.
Now, turn on the flame, then heat the saucepan by adding 2 tbsp olive oil. And add the blended tomatoes to it.
Then add red chili flakes, salt, sugar, mixed herbs, basil, canned tomatoes, oregano, l, paprika powder and stir it in oil.
Cook them on medium heat for about 8 to 10 minutes by stirring constantly.
Now ready to serve with pizza.
How to make sauce Pasta?
Ingredients
Tomatoes - 5 (medium size)
Salt - 1 tsp
Oil - 2 tbsp
Garlic - 3 tbsp (chopped)
Finely chopped onion - 3 (medium size)
Black pepper powder - ½ tsp
Red chili flakes - 1 tsp
Tomato puree - 2 tbsp
Mixed herbs - 1 tsp
Cheddar cheese - 1 tbsp
Method
Turn on the flame, keep the deep pan, then boil the water, and after boiling water add the tomatoes for 30 seconds.
Then keep tomatoes in cold water, cool down, peel it and cut it into finely chopped.
Again hit the other pan by adding oil, then add chopped garlic, finely chopped onion, and fry it for a minute.
After this add tomatoes, salt, red chili flakes, black pepper powder, and stir properly for about 2 minutes.
Then add tomato puree, mixed herbs, and cheddar cheese then stir it and cook for about 7 minutes.
Now turn off the flame and prepare to serve it with pasta.
How to make Veloute sauce?
It is also known as Blond sauce.
Ingredients
Margarine / Butter - 100 gm
Salt and pepper - as required
Stock - 1 ltr ( as per the name of used bone)
Refined flour - 100 gm
Method
Turn on the flame and hit the saucepan by melting butter.
Mix well after adding the flour.
Cook it on low medium until it becomes a bond color and texture.
Stir smoothly after slowly adding the stock and simmer for approx 1 hr
Thorough fine strainer or chinois pass it.
Now ready to serve with food.
