Achari Aloo Recipe

Ingredients

  • Potato (aloo) - 400 gm (boiled)

  • Imli water / Water tamarind water - 1 tsp

  • Water - ½ cup

  • Mango pickle oil (Panjabi) - 2 tbsp

  • Red chili powder - ½ tsp

  • Garam masala - 1 tsp

  • Roasted cumin powder - 2 tsp

  • Coriander powder - 2 tsp

  • Salt - 2 tsp

  • Medium onion - 2 (finely chopped)

  • Garlic cloves - 4 (finely chopped)

  • Black cardamom - 2

  • Bay leaves - 3

  • Black pepper - 4

  • Cloves - 3

  • Cumin seeds - 2 tsp

  • Methi seeds - 2 tsp

  • Mustard oil - 2 tbsp


Method

  1. Peel the potatoes after boiling.

  2. Turn on the flame and heat the pan by adding oil, cumin seeds, methi seeds, cloves, black pepper, bay leaves, cardamom, finely chopped garlic. Then fry them for some seconds.

  3. Add chopped onions and fry it until becoming golden brown.

  4. After this add salt, coriander powder, roasted cumin powder, garam masala, red chili powder, Punjabi mango pickle oil, and mix well.

  5. Now add ½ cup water and cook it for 5 minutes by covering with the lid.

  6. After 5 minutes add the boiled potatoes, mix well, and cook it again by covering with the lid for about 5 minutes. Then add Imli water/tamarind water, mix well, and again cook it for 5 minutes.

  7. After this turn off the lame and ready to serve.


Baigan ka Chokha


Ingredients

  • Brinjal (Baigan) - 2

  • Water - ¼ cup

  • Red chili powder - 1 tsp

  • Red chili powder - 1 tsp

  • Fresh coriander - ½ cup (finely chopped)

  • Green chili - 2 (finely chopped)

  • Salt - 1 tsp

  • Large tomato - 1 (finely chopped)

  • Large onion - 1 (finely chopped)

  • Garlic cloves - 4 (finely chopped)

  • Ginger - 1 inch (finely chopped) 

  • Cumin seeds - 2 tsp

  • Mustard oil - 3 tbsp

Method

  1. Stir oil to brinjal then turn on the flame and roast it on all sides. After this, turn off the flame. Peel it and mix it properly.

  2. Again turn on the flame and heat the pan by adding mustard oil. Then add cumin seeds, finely chopped ginger, finely chopped garlic and fry it for some seconds.

  3. After this add chopped onion, fry it until becoming brown. Now add chopped tomato and fry for 2 to 3 minutes with adding salt.

  4. For 5 minutes with the help of a lid cover it. Add chopped green chili, chopped fresh coriander, red chili powder, salt, and mix them well by adding water.

  5. After this add recently mixed brinjal, mix it properly. Then fry for 3 minutes and turn off the flame.

  6. Now ready to serve.


Paneer Masala Recipe


Ingredients

  • Fresh paneer - 250 gm

  • Fresh cream - 2 to 3 tsp

  • Kasoori methi - ¼

  •  Coriander leaves - ½ cup

  • Salt to taste

  • Red chili powder - as per taste

  • Turmeric powder - 2 tsp

  • Medium green chili - 2 (chopped)

  • Fresh coriander leaves - ½ cup

  • Medium tomatoes - 2 (chopped)

  • Whole ginger - 1 inch

  • Whole garlic - 4 to 5

  • Medium onion - 2 (chopped)

  • Cloves - 4

  • Cinnamon - 1 inch

  • Whole black pepper - 4

  • Cumin seed - 2 tsp

  • Refined oil - 2 tbsp


Method

  1. Chop the paneer into small cubicle sizes, onion, tomatoes, green chili, ginger, fresh coriander and keep aside.

  1. Turn on the flame and heat the pan by adding oil.

  2. Then add cumin seeds, whole black pepper, cinnamon, cloves and fry for some seconds.

  3. Add chopped onion, chopped ginger, garlic whole, fry it until it becomes light brown.

  4. Then add chopped tomato, salt, chopped fresh coriander leaves, and mix well. Fry them on a medium flame for some minutes. After this, turn off the flame.

  5. Now take a blender and blend all recently made veggies.

  6. After blending again, turn on the flame and heat the pan by adding oil, cumin seeds.

  7. Then add recently made veggie paste, chopped green chili, turmeric powder, coriander powder, red chili powder, salt and mix them properly. After mixing add chopped fresh coriander leaves, kachori methi.

  8. Now add water and mix properly, and cook for 2 to 3 minutes with the lid on with the help of a lid.

  9. After this add chopped paneer, mix properly and again cook by covering with a lid for five minutes. Then add fresh cream and mix well. And turn off the flame.

  10. Now ready to serve.
