Thai Larb Recipe
Ingredients
Fresh mint - about 20 leaves
Green Spring onions - 3 to 5
Cilantro leaves - few leaves (optional)
Shallots - 3 to 4 (small)
Limes - 1 to 2
Fish sauce - 1/2 tbsp
Sugar - 1/8 tbsp
Red chili flakes - 1 - 1/2 tbsp
Minced Pork - 300 gm (1 pound)
Thai sticky rice - 5 tbsp (uncooked)
Method
Turn on the flame and heat the pan by adding sticky rice and stir it continuously for about 15 minutes.
Then pound the rice in pounding, after pounding keep aside in a bowl.
Again turn on the flame and heat the deep pan and add minced pork meat. Then fry it for 5 minutes on high flame. After this turn off the flame.
Now add the pounded rice, red chili flakes, sugar, fish sauce, squeeze the lemon in it and mix properly for some minutes.
After this peel, the skin of shallots cut them into half rings, chopped the green onions, mint, add them to the pork bowl then mix them properly.
Now take it out on the plate, garnish with mint leaves, and ready to serve.
Thai Fried Rice Recipe
Ingredients
Cooled cooked rice - 1.5 cups
Lime juice - ½ tbsp
Fish sauce - 3 tbsp
Thai chilies - 5
Fish sauce - ½ tbsp
Oil - 1 tbsp
Pinch of sugar - (optional)
Oyster sauce - ½ tbsp
Soy sauce - ½ tbsp
Egg - 1
Garlic - 2 cloves
Chinese broccoli - 1 leaf
Onion - 3 (medium)
Shrimp - 10 piece
Black pepper powder - ½ tsp
Method
Wash and cut the garlic, chili, onion, Chinese broccoli. Then peel off the head of the shrimp.
Take a clean bowl and add fish sauce, chopped chili, lemon juice, mix properly, and keep aside.
Turn on the flame and heat the deep pan by adding oil. Then add chopped garlic, shrimp and fry them continuously for about 45 seconds.
Now add cooked cool rice, mix, and fry properly for some second. Then break the egg and add it, mix all well.
Add soya sauce, oyster sauce, a tiny pinch of sugar, fry for some second and add Chinese broccoli, slice chopped onion, green onions. Mix them and fry for about 2 minutes
Now turn off the flame and take it out on the plate. Then ready to serve with prick nabla (step b food) after sprinkle with black pepper powder.
Thai Green Curry Recipe
Ingredients
Corn flour - 1 tbsp
Salt to taste
Coconut milk - 2 cups
Mushroom - 1 cup (chopped)
Broccoli - 1 cup (chopped)
Baby corn - half-cup (chopped)
Green bell pepper - half cup (chopped)
Red bell pepper - half cup (chopped)
Vinegar - 1 tsp
Kaafir Lime leaf - 1
Thai basil - ½ cup
Coriander leaves - ½ cup
Onion - 1 (chopped)
Green chilies - 3 (chopped)
Galangal - 1
Ginger - 1 ½
Garlic - 5 to 6 cloves
Lemongrass - 2 stalks
Peppercorns - 4
Cloves - 2
Coriander seeds - 1 tbsp
Euros - ½ tsp
Method
Turn on the flame and heat the pan. Then add coriander seeds, euros, peppercorns, and for 1 minute dry roast them. Then turn off the flame.
Now take a blender and grind the recently toasted ingredients.
Stop the blender after grinding and add chopped stalks of lemongrass, garlic, ginger, galangal, chopped green chili, chopped onion, coriander leaves, Thai basil, kaafir lime leaf, vinegar, a little bit salt, and water. Then grind them all together.
Again turn on the flame and heat the pan by adding oil. Add 5 tbsp paste of recently made aromatic paste. For a minute cook it.
After cooking keep one side of the pan and add oil. Then add chopped vegetables as shown in ingredients.
Mix all properly and add a little bit of salt. then fry for them for about 2 to 3 minutes.
After this add coconut milk after adding it on coconut milk. Mix them properly and for 2 to 3 minutes cook them properly on medium flame.
Again add salt, mix well and cook for more than 8 to 10 minutes on high flame. And turn off the flame.
Take it out in an eating bowl and ready to serve.
