Consomme Soup Recipe


Ingredients

  • Egg white - 1 Nos

  • Mincemeat  - 150 gm (Chicken, Mutton, Beef, Buff)

  • Mirepoix - 100 gm

  • Cold brown stock - 1.5 ltr

  • Julienne cut vegetables (carrot and cabbage) - each 1 cup

  •  Salt - to taste

  • Bouquet garni - as required


Method

  1. Take a thick bottomed deep pan and add egg white, julienne cut vegetables, mincemeat, mirepoix, cold brown stock - 250 ml, salt, bouquet garni, and mix them properly.

  2. Turn on the flame, place the same pan, and add the remaining stock on low flame.

  3. Simmer the mixture for 1.5 to 2 hrs without stirring after boiling on low flame.

  4. After cooking for 1.5 to 2 hrs stop the flame and throw double muslin strain carefully.

  5. By scumming timely remove all fat by correcting the seasoning.

  6. Now ready to serve.


Chicken Broth Soup Recipe


Ingredients

  • Chicken boneless - 150 gm

  • Mixed vegetables - 25 gm

  • Water or stock - 1 lit - 1  ½

  • Barley or rice - lit

  • Bouquet Garni - 50 gm

  • Celery, leek, bean, turnip, carrot - 200 gm

  • Parsley - as required

  • Salt and pepper - to taste

  • Chicken cube - as required (optional)


Method

  1. Take a deep saucepan and add water or cold stock, add skinned chicken.

  2. Turn on the flame, until the summer is cooked and removed.

  3. Cut into 2mm. Dices after washing, peeling the vegetables.

  4. Add bouquet garni, stock, and season.

  5. Simmer until almost cooked after adding the barley or washed rice.

  6. Cut boiled chicken into 2mm. Dices, then add this chicken to the same pan.

  7. Cook it for some minutes and stop the flame.

  8. Correct the seasoning after skim and ready to serve by garnishing with chopped parsley.


Cream Soup Recipe


Ingredients

  • Chicken stock - 1 lit

  • Refined flour - 50 gm

  • Butter - 50 gm

  • Mirepoix - 100 gm

  • Bouquet garni - as required

  • Cream - 125 ml

  • Salt and pepper - to taste

  • Boneless chicken - 100 gm (for the cream of chicken soup)

  • Milk - 1 cup (optional)


Method

  1. Turn on the flame, heat the thick deep bottom pan by adding butter to melt.

  2. Stir with a spatula after adding mirepoix,  till light brown cook it.

  3. Stir after adding refined flour, then cook until getting a little brown on low flame to a sandy texture.

  4. Cool it lightly after removing it from heat.

  5. Slowly mix in the bouquet garni and hot stock.

  6. Simmer for ½ to 1 hour then skim when necessary.

  7. Return to the clean saucepan after passing through a fine strainer.

  8. Correct the seasoning and consistency after reboiling, then cut the chicken into dice and add for chicken soup.

  9. Lastly, add cream or milk to make cream soup. Cook for some minute then stop the flame.

  10. Now ready to serve.


Tomato Soup Recipe


Ingredients

  •  Chopped Tomato  - 500 gm (washed)

  • Butter - 2 tbsp

  • Cream - 2 tsp

  • Black pepper powder - ½ tsp

  • Salt - ½ tsp

  • Corn flour - 1 tsp

  • Sugar - ⅓ tsp

  • Clove - 3

  • Cinnamon stick - 2 inch

  • Basil leaves - 4-5

  • Bay leaf - 1

  • Large onion - 1

  • Garlic - 5 - 6


Method

  1. Turn on the flame then hit the deep pan by adding butter, bay leaf, and fry it on a medium flame for some seconds.

  2. In the same pan add cut garlic, onions, and fry them on a medium flame for 2 to 3 minutes.

  3. After 2 to 3 minutes stir properly and add cut tomatoes, salt, and mix them well. Then cook on a medium flame for 3 to 4 minutes by covering the pan.

  4. After this add basil leaves to taste and cook for ½ minutes by mixing well on medium flame. Again stir and turn off the flame to cool down.

  5. After cool down, take a blender and blend the tomato mixture to make a paste. Then take a bowl and strain it.

  6. Again turn on the flame, keep the pan and add tomato paste on a low medium. Then stir it properly by adding one cup of water.

  7. Then add salt, black pepper powder, sugar by mixing well. Then cook it on low-medium flame for 5 to 7 minutes by covering the pan with a lid.

  8. After this stir it after opening the lid. Mix water in cornflour and stir then add to soup and mix properly. 

  9. Cook on low-medium flame for a minute. Then add cream and stop the flame after mixing properly.

  10. Now ready to serve.
