Malai Laddu Recipe
Ingredients
Milk - 2 liter
Lemon juice - 2 tbsp
Coldwater - 1 cup
Ghee - ½ tsp
Cream (malai) - ¼ cup
Milk powder - ¾ cup
Condensed milk - ¾ cup
Cardamom powder - ¼ cup
Method
Turn on the flame and heat the deep pan by adding milk.
Continue stirring and boil the milk on high flame.
After this add 2tbsp lemon juice and stir it. Stir until the milk curdles and separate the water and turn off the flame.
Now drain the milk and collect the milk small ball then squeeze it on the cloth after adding cold water and leave it aside for 10 minutes.
Again turn on the flame and heat the pan by adding ghee. Then add ¼ cup milk, cream, and mix them properly.
Add milk powder and stir it until becoming a smooth texture. Then turn the flame low.
After this, squeeze a small ball (paneer) and bring it into a crumble and mix in the same pan of milk. Mix them properly.
Now add condensed milk, mix, and continuously stir it until it becomes thick on medium flame. After this add cardamom powder after 15 minutes and mix well.
After this spread and leave for 5 minutes and turn off the flame.
Now make the laddu ball and ready to eat.
Coconut Burfi Recipe
Ingredients
Ghee - 1 tsp
Freshly grated coconut - 3 cup
Sugar - 2 cup
Cardamom powder - ¼ tsp
Method
With the help of ghee, grease the square pot after keeping baking paper.
Take fresh coconut and grate it, keep it aside.
Turn on the flame and heat the pan by adding ghee, then add freshly grated coconut. Mix them properly and cook for 2 minutes on low flame.
Now add sugar, then mix and cook until sugar dissolves in grated coconut and becomes a thick paste on medium flame.
Add cardamom powder, mix properly for some minutes. After this, turn off the flame.
Add the coconut mixture to the recently greased square box. Spread it on the box.
For 10 minutes keep for a cool down. After this take it from the box and cut it into a small rectangular shape.
Now, your coconut burfi is ready to eat.
Adhirasam Recipe
Ingredients
Raw rice - 1 cup
Cardamom powder - ¼ tsp
Dry ginger powder - ¼ tsp
Sesame seeds - ½ tsp
Jaggery - ¾ cup
Water - ½ cup
Ghee - 1 tsp
Gingelly oil - 1 tsp
Method
Take a clean bowl and add raw rice, add water, and soak for about 2 hours.
For 20 minutes dry the rice after draining. But it shouldn’t dry completely.
Take a grinder and grind the soaked rice in fine powder.
Take another dry clean bowl and add the ground rice powder. Then add cardamom powder, dry ginger powder, sesame seeds, and mix them properly.
Now turn on the flame and heat the pan by adding jaggery, water. Then mash the jaggery. Cook for some minutes and turn off the flame.
After this strain it. Again hit the pan and add syrup, mix it well until it becomes a thick liquid.
Then add the ground rice flour slowly after checking the consistency. Mix continuously until becoming a thick mixture.
Add ghee, gingelly oil, and mix them properly. After this keep aside after stopping the flame for a cool down. Then pour the mixture into small boxes by covering. Keep aside for 24 hrs.
After 24 hours, make it a lemon size ball and make a flattering shape for all mixtures.
Again turn on the flame and heat the deep pan with adding oil. Deep fry the flattering shape mixture on low flame. And turn off the flame.
Now Adhirasam sweet is ready to eat.
Pista Burfi Recipe
Ingredients
Almonds - ½ cup
Hot water - 1 cup
Pistachio - ½ cup
Sugar - 1 cup
Milk powder - 2 tbsp
Green food color - 2 drops
Ghee - 1 tsp
Cardamom powder - ¼ tsp
Chopped pistachio - 1 tsp
Method
Take the square pot, grease it with ghee after adding baking paper to it and keep it aside.
Take a clean bowl then add almonds and hot water soak it for 30 minutes.
After 30 minutes, peel the skin of the almonds and dry them.
Then grind it after adding pistachio.
Now, turn on the flame and heat the pan by adding sugar and water, mix them properly, and cook until becoming sticky.
After this add ground powder, milk powder. Mix them well and cook on low flame thick liquid. Then add green food color and mix properly.
Finally, add chopped pistachio and mix for a few seconds. Then turn off the flame.
Take the greased square pot and spread the mixture properly on it. Then keep it aside for 30 minutes to cool down.
Now take it out from the pot and cut. Ready to eat.
