Chicken Stock Recipe

Ingredients

  • Chicken bones - 500 gm

  • Water

  • Celery - 1

  • Carrot - 1 (roughly chopped)

  • Onion - 1 (roughly chopped)

  • Peppercorns - 8 to 10

  • Parsley stalks - 2 to 3

  • Bay leaf - 2

  • Spring thyme - 1


Method

  1. Turn on the flame, keep the deep pan, and boil the chicken bones by adding water. Then off the flame after weel cooked.

  2. Cut the carrot, celery, and onion in rough shape.

  3. Now take the bowel and keep the cooked meat, roughly cut vegetables, and add water in it. Then cook it into high flame.

  4. After this make bouquet garni by bundling three ingredients named parsley stalks, bay leaves, spring thyme. Then keep that bouquet garni to boiling vegetables and chicken. Add peppercorns and cook on high flame for about 15 minutes.

  5. Then skim it and cook more 45 minutes on medium flame. Turn off the flame.

  6. Now strain it after cooling down it for about 10 minutes.

  7. Now ready to use with other foods.


Fish Stock Recipe


Ingredients

  • Olive oil - 2 tbsp

  • Water - 8 cups

  • Fresh parsley - 1 bunch

  • Fish head - 500 gm

  • Prawn head - optional

  • Large carrot - 1 (roughly cut)

  • Leeks - 2

  • Spring onions - 4

  • Bay leaves - 3

  • Garlic cloves - 2

  • Black peppercorns - 10


Method

  1. Turn on the flame and heat the deep pan by adding oil. After heating the oil, add bay leaves, garlic, black peppercorns. Fry them for some seconds.

  2. Now add leeks and green onions. For a few minutes saute them.

  3. Then add roughly cut carrot, cook for more than 2 minutes.

  4. After this add fish head and prawn head, parsley. Then for 5 minutes cook them.

  5. At last add water. Cook it by covering with the help of a lid on medium to high flame. Then turn off the flame.

  6. Now strain and ready to use.


Vegetable Stock Recipe


Ingredients

  • Cloves - 2 to 3

  • Black peppercorns - 5 to 6

  • Bay leaf - 1

  • Garlic cloves - 2 (crushed)

  • Celery stalk - 3 inches (chopped)

  • Medium carrot - 2 (sliced)

  • Medium onion - 1 (sliced)

  • Water as required


Method

  1. At first peel and wash the vegetables. After washing cut them roughly into chunks.

  2. Crush the garlic cloves and cut the celery stalk, carrot, onion.

  3. Slightly mash all garlic cloves.

  4. Turn on the flame and heat the pan by adding water. Then add cloves, bay leaves, crushed garlic cloves, celery stalk, carrot, and onion. Cook it for about 20 minutes. Then turn off the flame.

  5. After cooking, for 15 minutes simmer it. Then strain with the help of Muslim cloth or strainer.

  6. Now ready to use with foods.


Master Stock Recipe


Ingredients

  • Water - 3 liters

  • Shaoxing rice wine - 300 ml

  • Dark soy sauce - 320 ml

  • Light soy sauce - 220 ml

  • Yellow rock sugar - 400 gm

  • Galangal (Galan Kao)  - 30 gm ( 1cm sliced)

  • Ginger - 30 gm ( 1 cm sliced)

  • Cassia Bark - 30 gm

  • Star Anise - 12

  • Cinnamon stick - 1

  • Cardamom pods - 4

  • Fennel seeds - 1 tbsp

  • Roughly chopped shallots - 3

  • Roughly chopped spring onion - 2

  • Roughly chopped garlic - 4 cloves


Method

  1. Turn on the flame and heat the deep pan. Then add roughly chopped onion, garlic, and shallots. 

  2. Add cardamom pods, fennel seeds, cinnamon stick, star anise, cassia bark, gallon Kao, ginger, yellow rock sugar, light soy sauce, dark soy sauce, shouting rice wine, water. Cook it on high flame.

  3. After boiling cook it on medium to low flame by cover it with a lid.

  4. For 1 hour and 15 minutes allow it to simmer.

  5. After this open the lid and turn off the flame. Then leave it for 30 minutes.

  6. After 30 minutes strain it through a strainer. Now the master stock is ready.


Prawn Stock Recipe


Ingredients

  • Prawn shells and head - From the prawn of 2 kg

  • Water - 4 liter

  • Garlic - ½ cup (peeled)

  • Oil - ½ cup

  • Rock sugar - 10 gm


Method

  1. Turn on the flame and heat the deep pan by adding oil.

  2. After this add cloves of garlic. Then fry it until becomes light brown color.

  3. Now add prawn shells and heads, fry them on a medium flame for 1.5 minutes.

  4. After this add water and cook it on high flame for about 45 minutes.

  5. After 45 minutes turn off the flame and strain it through the strainer.

  6. Now prawn stock is ready.
